Nothing beats good chicken soup. This recipe is healthy, filling and provides some good immune enhancing ingredients.
This soup is very healthy and will stick to your ribs. It will also help to open up sinuses. I highly recommend it for those suffering from colds, sore throats, coughs, flu or sinus infections. And, of course, it's absolutely wonderful on cold winter evenings. Serve with a colorful organic salad and homemade organic cornbread.
Can be made with or without chicken. Potatoes can be omitted and organic wild rice or brown rice substituted. Or add soup over cooked rice, separately. I also like to add a couple packages of frozen organic okra.
Ingredient List
2-3 boxes of organic chicken or vegetable broth
2-3 cups of purified water
1-2 TBSP of red wine vinegar
3-4 stalks of diced organic celery
1-3 medium to large diced organic onion (the more the better)
3-5 cloves organic garlic (the more the better)
2 TBSP unrefined, cold-pressed olive oil or refined coconut oil
2-3 Organic free-range chicken breasts (boiled) (optional)
2-3 packages organic frozen vegetables (sometimes I add extra organic carrots)
1 can organic tomatoes with green chilies
Diced organic red potatoes (2 potatoes for each member--as these are usually small potatoes)
Garlic pepper (organic) to taste
Organic Sea Salt (to taste)
Organic Chili Powder (I use a lot of this!)
Directions
Boil chicken breasts in purified water on top of stove. Sautee in olive oil or coconut oil (use the refined unless you want everything to taste like coconuts) and red wine vinegar the garlic, onion and diced celery. Add broth, tomatoes with green chilies and purified water. When hot add frozen vegetables and diced potatoes (add boiled chicken breasts at this time). Cook (covered) until all vegetables are tender. Add seasonings (garlic pepper, sea salt and chili powder) to taste (be sure to taste as this can easily get too "hot") and simmer, covered, for 15 more minutes. This makes a large pot of soup.
